What was the catalyst that ignited your passion for healthy eating?

When I moved to London and started work, I wasn’t really conscious about what I was eating, turns out it was predominantly processed junk! My health took a nasty hit and I suffered from multiple health issues.  It was only when someone suggested I look at what I was eating that a little light came on…

With so many different dietary protocols out there, choosing one to follow can be confusing and overwhelming, especially for those just making the switch to a healthier diet. What are your tips for establishing a way of eating that works best for us as individuals?

I think taking it one step at a time is essential.  I tried to do everything at once initially and just crumbled. I encourage starting with just one thing, this can have a huge long term impact if you keep just focusing on one thing at a time.  And don’t buy into fads.  Just slowly switch one processed food for a natural version.

If we were lucky enough to peek into your kitchen cupboards and fridge on a regular basis, what are the staples we’d always find?

Coconut oil, avocados, lots of organic green vegetables, sauerkraut, organic chicken, fresh herbs, lemons & chilli!  Oh and pesto.  I make tonnes and tonnes of pesto.

If you had to choose one, what food or drink should we put on our New Year’s resolution to avoid or cut down on now?

Well, it has to be sugar, in all forms – this includes the alternatives.

With January well underway and ‘detox’ the word of the moment, what recipes in Eat. Nourish. Glow can we incorporate into our healthy eating repertoire this month to assist us in the post-festive gentle cleanse?

All of them really! The chicken nuggets wrapped in lettuce are a personal favourite, the crab salad, the almond & rose breakfast… oh yes and the monkfish with broccoli mash… you can tell I’m a comfort food girl.
