With Summer coming to a close you can keep that sunny feeling alive with this lively punch from The Herball. We first tried this at the pop-up Botanical Bar by Michael Isted during our Summer Festival.
Content Summer Punch #1 (recipe for 1)
- 1 Fresh apple
- 1 stick Pink rhubarb
- 25ml Elderflower & lemon Cordial*
- 25ml Gin
- 5ml Metté cassis Eau de Vie
- 5ml Fresh lemon juice
- Spritz Elderflower aromatic water
- Garnish Fresh elderflowers
Method: Juice the fresh apple & stick of rhubarb, fill a glass full of ice add all ingredients and stir, garnish with freshly picked elderflower and spray with elderflower aromatic water. Can be made in larger batches and served in a punch bowl with fresh elderflowers & slices of lemon. This punch can also be enjoyed without alcohol, just add a splash of sparkling water.
Homemade Elderflower & Lemon Cordial*
- Plenty Fresh elderflowers
- 300ml Light Honey
- 200g Sugar (or alternative like xylitol)
- 3 Fresh lemons
Method: Pick bundles of fresh elderflowers on a sunny afternoon free from rain, pick away from busy roads, check for any insects and give them a very gentle rinse. Place elderflowers (be very generous with the elderflowers get as many as you can in the pan) in a large pan with the honey, sugar (or alternative), water, lemon juice and grated zest, bring to a simmer for 5-6mins with lid on, turn off heat and allow to cool completely. In a kilner jar place a handful of fresh elderflowers and 1 lemon sliced, pour cordial over and seal, leave to macerate overnight and use. The cordial is also great served with still/sparkling water or with sparkling wine.
